Although cows that have been bred for a certain period were said to have "inferior meat quality compared to marbled beef," in recent years they have been attracting attention as they are raised as meat cattle for about six months to a year after they have finished breeding, resulting in a flavorful lean beef with concentrated umami, a different kind of taste from marbled beef.
